- Beat the eggs well, season them with salt and pepper
- Heat the clarified butter in an omelette pan on high heat
- Pour the egg mixture into the pan and scramble with wooden spoon. (move the pan and utensil at the same time until the egg mixture has desired)
- Let the egg mixture finish cooking without stirring
- Tilt the pan and slide a wooden spoon around the lip of the pan, under the omelette, make sure it does not sick. Slide the omelette to the front of pan and use the fold/wooden spoon to fold it inside to the center
- Turn the pan upside down, rolling the omelette onto the plate. The finished omelette should be oval shaped.
